What Does Gluten Free Mean?

Glutens are a group of proteins found in wheat, barley, rye, and some oats. They provide elasticity in food, acting as a kind of glue that helps products maintain shape, strength, and texture. Foods that don’t contain glutens are considered gluten-free.

Many whole foods are naturally gluten free. But others are processed to remove gluten, and many of these aren’t always safe or healthy. If processed in facilities that also process wheat, gluten free foods are at risk of cross-contamination. It pays to read labels to make sure your foods are truly gluten free, high quality, and pure. The FDA states that a food labeled gluten-free must contain no more than 20 parts per million of gluten. The Gluten Free Certification Organization (GFCO) rules are even stricter than those set by the FDA. GFCO requires that a product must contain no more than ten parts per million of gluten to be labeled gluten free.

What are some of the reasons people avoid gluten?

People avoid gluten for medical reasons or as a dietary choice. For many people, avoiding gluten can relieve uncomfortable symptoms like headaches, low-energy, constipation, bloating, or diarrhea. However, there are also three significant medical reasons for avoiding gluten.

Celiac Disease

Anyone who suffers from a severe immune system disorder called celiac disease has non-celiac gluten sensitivity (NCGS), or an allergy to wheat, also called Gluten Ataxia, and absolutely must avoid gluten. For these individuals, consuming foods with even trace amounts of gluten can have serious long-term effects and be life-threatening.

Celiac disease causes the immune system to attack the surface tissue of the small intestine, preventing vital nutrients from getting absorbed into the bloodstream and causing long-term health complications. The one percent of the U.S. population with celiac disease chooses a gluten-free diet because their doctor prescribes it. There is no medication for celiac disease – one can only manage it by avoiding gluten and allowing the intestines to heal.

Gluten Intolerance

About six percent of the U.S. population has non-celiac gluten sensitivity (NCGS) – or gluten intolerance. These individuals often experience many of the same symptoms as people with celiac disease, although they don’t test positive for the allergy. Their symptoms can improve or even go away when they eliminate gluten. There is no test for NCGS, and since the condition depends on symptoms only, a lot of controversy swirls around in the nutrition world about whether it even exists.

Wheat Allergy
